From Alchemy to Fermentation

Klokhuys Fermenten began with a simple fascination: what happens when you bring together time, fruit, yeast and curiosity?

What started as a quest for cider grew into a broader house of fermentation. A place where Belgian apples and pears form the foundation, but where the story reaches beyond classic cider alone. We make dry ciders, perries and hybrid ferments in which craft, experimentation and patience reinforce one another.

Our drinks start in the orchard. Belgian apples and pears are pressed, fermented and refined with respect for their natural character. Sometimes pure and lean. Sometimes layered with honey, herbs, hops, lambic or other ferments. Always with the same ambition: a drink that clearly begins with fruit, yet ends up somewhere entirely its own.

At Klokhuys Fermenten we believe good fermentation takes time. We work slowly, precisely and intuitively. We follow no fixed path, letting taste, season, technique and wonder guide us instead. Every bottle is the result of choices: which apple, which pear, which fermentation, which rest, which tension between freshness and depth.

Our inspiration draws on many different worlds: cider, wine, beer, mead, sake, lambic and old preservation techniques. Not to blur boundaries for the sake of blurring them, but to find new combinations that work. For us, fermentation isn’t a trick — it’s a language. A way of letting ingredients speak and creating something that becomes more than the sum of its parts.

Klokhuys Fermenten stands for Belgian fruit, artisanal craftsmanship and an alchemical curiosity. For drinks that are dry, pure and layered. For tradition with an experimental eye. For patience in a world that often wants to move too fast.

This is our house of fermentation.
